how do I add the new weapon models I downloaded?

It's like this: First of all, locate your models folder in (for example BB) your BB folder. Then take the .mdl file that you downloaded to the folder. It might replace some models, that is if you downloaded an hgrunt or zombie model. If it's a weapon model, place the .mdl file in the specified folder(for example a beretta model goes to the beretta folder). Hope you understand.
